Baking: Potato Rolls

Potato Rolls have long been my favorite bread to bake. They are a little sweet and go with any meal. Perfect to take to a family gathering. First I gathered what I needed and set out to make these.


Ingredients:
1 cup mashed potatoes
1/2 cup sugar
2 eggs
1 pkg yeast (or 2 1/2 tsp)
1/2 cup lukewarm water
1 cup of milk (HOT - aka 2 mins in the microwave)
6 cups of flour
2/3 cups shortening
1 1/2 tsp salt


Mix together the potatoes and sugar

Once that is well mixed add the eggs.

Proof your yeast (make sure it's good):
use the lukewarm water and empty the yeast packet in it. (sprinkle in a little sugar if you like). If it foams, use it!

(I made three batches of dough for all the rolls I made for Thanksgiving.)


Pour in your water/ yeast mixture.

Mix

Add your hot milk, shortening, and salt.

Make sure it's well mixed.

Slowly add your flour. Mixing it in after each cup.

Knead your dough then place in a bowl and let rise for an hour.

Punch the dough down and refrigerate OR shape into rolls. Let rise for another hour.

(If you choose to refrigerate I like to shape them before. Then when you take them out they need about an hour to rise. For me that's one way to Grandma's House.

Make sure to brush the tops with butter.

(I like to roll mine out and then cut them into squares and roll them. Parker House style.)

Bake at 350. Till golden brown.
